I heard two amazing things this week. One I will tell you about in a day or so... I can't even wait. The other thing is this - I met someone allergic to eggs. Can you imagine? They are kind of... everywhere. Her allergy is so intense that if anything that contains egg touches her mouth she becomes violently ill immediately. As my grade 8 self would say - harsh!
And so I give you this recipe. My sister copied it from a friend and I do not know where it was originally taken from. But here you have it in all it's egg-less glory.
Not only is it egg-less, but it is bake-less, flour-less and make-you-real-fat-less too! And still manages to be delicious. In fact, if you close your eyes while you eat it and tell yourself brownie! brownie! brownie! it magically becomes a guilt-free brownie. It is that good.
You need: a food processor and a brownie craving
1 C raw hazelnuts
1/2 C raw almonds
1-1/2 C pitted dates
4-6 TBS cocoa powder
1/2 C almond butter
3 TBS raw shredded coconut (I did a mix of sweetened and unsweetened)
Blend raw nuts in food processor, add almond butter, blend away, add dates and cocoa powder and blend a whole bunch more. Press into a 9" pan and sprinkle with coconut. Chill it a bit so it will hold it's shape.
Close your eyes and say brownie! brownie! brownie! and take a bite. Enjoy.
